The weather has been glorious lately and new potatoes are practically synonymous with summertime.  Sainsbury’s asked us to come up with a recipe to showcase the delicious British Gem baby new potatoes. We think this Walnut, Parsley and Gruyère Pesto Dressing is so simple and delicious that it will be a favourite for barbecues throughout the summer. This pesto is very easy to make and can be made ahead of time and stored. Creating a delicious and sophisticated potato side-dish will take just a few moments. It makes a great side for guests or for everyday use. You can find our recipe below.

Taste the Difference British Gem Baby New Potatoes

British Gems have a distinctive buttery flavour and golden colour. They are the perfect potatoes to takeover from Jersey Royals during the summer months. British Gems are grown in Britain and are freshly dug every day. Next, they are washed, packed and distributed to Sainsbury’s stores within 48 hours – you can be sure Taste the Difference British Gems are as fresh as can be. British Gems are available in Sainsbury stores now and can be found in a 750g pre-pack or loose.

Taste the Difference British Gems Baby New Potatoes

British Gem Potatoes with a Walnut, Parsley and Gruyère Pesto Dressing

Prep Time: 25 mins

Ingredients:

  • 50g walnuts
  • 50g parsley
  • 1 grated garlic clove
  • 25g Gruyère Cheese
  • 125ml Extra Virgin Olive Oil
  • extra oil for serving

Method:

This recipe really is so simple that it takes just moments. Add all of the ingredients into a blender and blast it until fully combined – and hey pesto – you have a pesto dressing. It really is that simple. This recipe makes a fair amount of the dressing but you only need a few tablespoons to dress enough new potatoes for four adults. The rest of the dressing keeps well in a jar and can be used for all kinds of things – from salad dressing to pasta sauces. You can also substitute other herbs, cheeses and nuts to get various flavours. Basil and pine nuts will make a traditional pesto but there are endless other combinations to try.

Pesto dressing for British Gems

When you wish to serve the new potatoes, simply boil them as usual. Then, add a dash of extra oil so that the pesto is loosened when added. Next, add 2-3 tablespoons of the pesto dressing. You may wish to shake the potatoes in the pan with the dressing to ensure that all are coated.

The potatoes are then ready to serve. They make a tasty addition to any barbecue but likewise could make an excellent side for any meal.
