Potato and Tomato with Jersey Royals

We have got together with Tescos to bring you the perfect recipe for Jersey Royal New Potatoes. This recipe for Potatoes with Tomatoes and Garlic makes a great side dish for any main course. In addition, you can eat it hot or cold, meaning it is versatile and can be eaten with salads and at barbecues.

Jersey Royal new potatoes are in season and in Tesco now until the end of July. They can only be grown on the island of Jersey and are delicious, earthy and nutty. The creamy and nutty texture of the Jersey Royals in this recipe goes perfectly with the tangy and sweet burst of flavour of the tomatoes.

Ingredients – New Potatoes with Tomatoes and Garlic

300g cherry tomatoes (halved)
1kg Tesco Jersey Royal new potatoes
4 teaspoons sunflower oil
3 tablespoons Extra Virgin Olive Oil
3 garlic cloves
1/4 a finely sliced red chilli OR 1/4 teaspoon chilli flakes
Salt and pepper
Fresh Basil
Fresh Rocket

Potato and Tomato Aglione

Method

Preheat the oven to 170 degrees (350F/Gas Mark 3). Half the Jersey Royals, or chop to make them equal in size, and toss them in the sunflower oil. Add to a baking dish and season with salt and pepper. Roast in the oven for 45 minutes or until the potatoes are browning and beginning to crisp.

Meanwhile, Halve the cherry tomatoes around the middle (not from top to bottom) and place them in a roasting tray with the cut side facing up.

Pour over the oil and place the garlic cloves, with the skin on, around the tray. Scatter the chilli/chilli flakes all over. Season with salt and pepper. Bake in the oven for 15 – 20 minutes, or until the tomatoes are very soft and begin to brown.

When the tomatoes are cooked, squeeze the garlic out of the skins and stir. You can discard the skins.

Finally combine the roasted potatoes and tomatoes in a large bowl, adding basil and rocket to garnish and any extra required seasoning. Serve New Potatoes with Tomatoes and Garlic hot with a meal or leave to cool for a great side dish for salads and barbecues.
