Slow Cooker Caramel and Pumpkin Spice Fudge with Crock-Pot®

We are so excited to be sharing some delicious recipes in partnership with Crock-Pot® this month, as part of Crock-tober.

This delicious fudge recipe is made with the Crock-Pot® Express Multi-Cooker; or as I like to call it the ‘No Pressure’ cooker because it’s so easy to use, even if you haven’t used a slow cooker before. It enables you to create tasty home-cooked meals, desserts and sweets, without the hassle or lots of washing up!

As we are well into autumn and the festive season approaches, my pumpkin spice fudge recipe is perfect for a little bit of cheer and comfort in the winter months – but with the Crock-Pot® Express Multi Cooker, it’s also a doddle to make. Fudge makes a great treat and you can even make and wrap a batch to give as presents to friends and family. The pumpkin spice and caramel flavours make this recipe the perfect accompaniment to a hot drink on a rainy afternoon. The recipe and full review can be found below.

The Crock-Pot® Express Multi-Cooker will revolutionise home cooking. It has the ability to cook any dish up to 70% faster at the touch of a button, meaning less time in the kitchen and more time with friends and family. You can also use it as a traditional slow cooker, which is ideal for busy parents like us.

The Crock-Pot® Express Multi-Cooker is a revelation and I am sure it is going to feature prominently in our future meal-planning. I cannot wait to experiment and see what else it can do!

Slow-Cooker Caramel & Pumpkin Spice Fudge

Ingredients:

  • 500g milk chocolate chips
  • 300g condensed milk
  • 100g canned caramel or caramel sauce
  • 3 tsp pumpkin spice mix (see below for how to make our pumpkin spice)
  • 200g pecan nuts (or anything else you would like to decorate)
  • 80g icing sugar

For the pumpkin spice:
All spices should be ground.

  • 3 tablespoons of cinnamon
  • 2 teaspoons of nutmeg
  • 2 teaspoons of ginger
  • 1 teaspoon of allspice
  • 1/2 teaspoon of cloves

Method:

Add the chocolate chips, condensed milk and caramel to The Crock-Pot® Express Multi-Cooker and set to sauté for ten minutes, stirring regularly.

As soon as the chocolate has melted, add the pumpkin spice mix and icing sugar. Stir until combined.

Set the Crock-Pot® Express Multi-Cooker to the slow cook function, on ’High’, and cook for 30 minutes, stirring every 15 minutes or so in order to stop the top of the fudge setting. You can set the slow cooker to 1 hour but just stop it after 30 minutes. In this recipe, leave the lid off the slow cooker – this stops condensation forming which would alter the consistency of the fudge.

Meanwhile, prepare a 1-inch deep 12×8 baking tin by greasing and lining with baking paper.

When ready, pour the fudge mixture into the baking tray and smooth surface. Add pecan nuts or any other fruit, nuts or sprinkles you would like to use to decorate.

Set in the fridge for a minimum of 2 hours. Once your fudge is firm, remove from the tin and cut into small squares, ready to serve.

  3. Wow!!! That fudge looks soo soo sooo good! It’s all about the pumpkin flavours now, so this recipe is completely on point. Except, I don’t have a slow cooker yet. I keep saying I need to get one. Perhaps someone will get me one for Christmas! *leaves page open so hubby sees this 😉
