Jammy Dodger Red Velvet & White Chocolate Cookies

Are you looking for the perfect Valentine’s treat or romantic bake to give to that special someone? Then look no further. These reverse jammy dodger cookies are similar to the traditional biscuit that you know and love – but the red filling and white biscuit have been swapped around. The biscuit is made from a rich and delicious chocolate red velvet sugar cookie and the filling is white chocolate frosting.

You can make these Jammy Dodger cookies with any cookie cutters – you simply need a round or crinkle edged cutter and a small heart cutter for the centre. Or, you could use the specific Jammy Dodger cutter that I used which is available in this set.

Red Velvet Jammy Dodger Cookies

Ingredients

For the Jammy Dodger Cookies:

  • 225 g unsalted butter
  • 115 g cream cheese
  • 240 g golden caster sugar
  • 420 g plain flour
  • 30 g cocoa powder
  • 1 tbsp red gel food colouring
  • 1 egg yolk
  • 1/2 tsp salt
  • 2 tsp vanilla extract
  • Jammy Dodger cutter or other cookie cutters

For the white chocolate filling:

  • 250 g unsalted butter
  • 250 g icing sugar
  • 200 g white chocolate

Instructions

For the cookies

  • Preheat the oven to 190 degrees/ gas mark 5 and line baking trays with baking paper
  • Put the butter, cream cheese, and sugar in a large mixing bowl and whisk with on medium speed for 1 minute or until smooth.
  • Add the egg yolk, vanilla, and food-colouring gel and mix on medium speed until combined.
  • Add the flour, cocoa, and salt.
  • Mix until the dough begins to form and bring together by hand
  • Roll the dough out to about half a centimetre thickness. You may wish to split the dough in two for this. Make sure the surface is well floured or use baking paper.
  • Cut out the cookies. You will need solid round shapes for the back of the sandwich and round shapes with heart holes in the middle for the front of the sandwich. Together, the sandwich will make the jammy dodger shape.
  • Place on the baking trays and bake for 10-12 minutes, or until the edges start to look firm.
  • Wait until the red velvet cookies are cool and then add the white chocolate filling and assemble the sandwich biscuits to look like jammy dodgers.

For the filling

  • Break the white chocolate and melt it over a bain-marie.
  • Beat the butter on low speed until soft and then add the icing sugar, 1 tbsp at a time and beat until fully combined.
  • Once the chocolate is still melted but cooled,  pour it into the butter and sugar mixture and beat on low speed until fully combined.
  • Spread the frosting mixture on one of the whole cookies and then add a cookie with a heart-shaped hole to complete the sandwich. Your cookies should now look like reverse jammy dodgers.
