Aubergine, Chilli, Chorizo & Sun-Dried Tomato Linguine Recipe

Ingredients

(Serves 4)

  • 2 Onions
  • Flat Leaf Parsley
  • 5 tbsp Flat Leaf Parsley
  • 4 Garlic Cloves
  • 4 tbsp Sundried Tomatoes
  • 2 Aubergines
  • ¼ tsp Chilli Flakes
  • 3 Chorizo
  • 400 grams Linguine
  • 2 tins Chopped Tomatoes

Method

Pre-heat the grill to high and boil a large pot of water. Peel and finely dice the onion and finely chop the parsley. Used the flat side of a large knife to press down on your garlic cloves to release the skin. Remove the skin and dice both the garlic and the sun-dried tomatoes finely.

Slice the aubergines in half lengthways, creating four long strips. Slice lengthways along each strip of aubergine to remove a bit of the white spongy part. Now chop the aubergine the other way, into around 1cm chunks.

Spread the aubergine over a baking tray and mix with 2 tbsp of olive oil and 1/2 tsp of salt. Put the tray on the shelf closest to the grill and cook for around 15-20 mins, or until the aubergine is soft and slightly crispy around the edges.

Fry off the onion, garlic, sun-dried tomatoes, and chilli flakes in 2 tbsp of olive oil on medium heat until the onion is soft. If you would prefer a less spicy dish, reduce, or remove the chilli flakes. This should take around 5 mins. When the onion is soft add the chorizo and cook for a further 2 mins.

Cook the linguine in the boiling water with ½ tsp of salt for around 10 mins, or until the pasta has just a hint of firmness left in the middle then drain.

Add the tinned tomatoes to the onion, garlic, and chorizo mixture, together with ½ tsp of sugar (if you have some), ½ tsp of salt and a few grinds of black pepper. Cook the mixture on medium-low heat for around 5 mins, or until you have a nice thick sauce. Once thickened, stir in the grilled aubergine.

Finally, add the drained pasta into the pan with the tomato sauce and sprinkle over the parsley. Stir or toss the ingredients together and serve.
