We are delighted to be partnering with Thermomix®, the ultimate kitchen gadget and, over the next few months, we will be bringing you some amazing recipes. The Thermomix® can do dozens of amazing things – from making yoghurt and ice-cream to cooking rice expertly, and cooking meats to perfection with the sous vide method. This month, we are showing off the Thermomix’s baking skills with these mouth-watering Strawberry Scones with Honey and Almonds.

Don’t worry if you do not yet own a Thermomix® – the recipe can be made without one. However, the Thermomix® makes recipes so quick and easy and our recipes will show off the amazing things that a Thermoxix can do.

Our first idea was to make these amazing strawberry scones with whipped cream in the recipe.

Thermomix and Strawberry Scones

Strawberry Scones with Honey and Almonds

Ingredients

  • 250g plain/all-purpose flour
  • ½ tsp salt
  • 1 tbsp baking powder
  • 85g cold butter, cubed
  • 40g golden caster sugar
  • 180g extra thick double cream
  • 40g runny honey
  • ½ tsp almond extract
  • 35g flaked almonds
  • 15g freeze-dried strawberries, chopped into 0.5cm pieces
  • A little extra sugar
  • One egg, beaten

Method

Makes 8 large or 12 small scones.

Pre-heat your oven to 195°c / 175°c fan.  Line two baking trays with baking paper.

Put the flour, salt and baking powder into the mixing bowl of the Thermomix® and set it to mix them for 4 seconds at speed 5.

Add the butter and sugar, and then set the Thermomix® for 4 seconds at speed 6.

If you do not yet own a Thermomix® you can combine the dry ingredients with a spoon and rub the butter in by hand until it forms breadcrumb consistency.

If you have the butterfly whisk attachment, you can whisk the cream and honey together using your Thermomix® before you start. Otherwise, whisk them together by other means until they form soft peaks.

Fold the cream and honey into the other ingredients with your spatula, add the almond extract then set it to dough function for 30 seconds. Again, you can mix by hand to form the dough if you do not yet own the Thermomix®.

Turn your dough out onto a lightly floured surface and bring it easily together.  Knead in the flaked almonds and freeze-dried strawberries, seeking to get a nice even distribution through the dough.

Shape the dough into a disc about 20 cm across- it’ll be about 4cm deep.  Use a sharp knife to cut the disc into either 8 or 12 wedges, depending on the size of scone you want.

Put half of the scones on each prepared baking tray and brush the top and side of each one with a little of the egg, before sprinkling them with a little bit of sugar.  Put them in the preheated oven for 12 minutes.  Let them cool completely on the tray before serving them with more extra thick cream and a drizzle of honey.

We were inspired to create this Strawberry Scones recipe by the simplicity and ease of Thermomix®. Our Scones have the delicious flavour of whipped cream and strawberries adding into the dough, solving the question of whether cream or jam should come first once and for all!
