This month we are continuing our partnership with Thermomix®, the ultimate kitchen gadget. The Thermomix® can do dozens of amazing things, many of which we have explored in our other recipes. Even better, it can do some of these things at once. Creating a dish like risotto usually requires a lot of time standing over the hob. But not with Thermomix®! Our Salmon, Spring Onion and Chilli Risotto requires minimum intervention from the cook and can all be done with the one device – Thermomix®!

Don’t worry if you do not yet own a Thermomix® – the recipe can be made without one. However, Thermomix® and risotto are a match made in heaven, as you will soon see.

What is Thermomix®?

Risotto usually requires constant stirring and adding stock to create the perfect consistency. The Thermomix® does all this while simultaneously steaming the salmon. Salmon Risotto with Thermomix

Salmon, Spring Onion and Chilli Risotto

Ingredients

  • 2 regular salmon fillets
  • Salt
  • Lemon Juice
  • 1 clove of garlic
  • 40g spring onions
  • ½ medium red chilli
  • 35g butter
  • 25ml + extra virgin olive oil
  • 200g arborio rice
  • 100ml good white wine
  • 600ml chicken (or fish) stock
  • 40g mascarpone cheese
  • Lemon juice
  • 10g parsley (for the pesto)
  • 50ml extra virgin olive oil
  • 20g parsley
  • ½ clove of garlic
  • 20g almonds
  • 25g pecorino cheese

Method

Serves 2

Salt the salmon fillets (using about 3g of salt), then place them on a square of baking paper and add oil and a squeeze of lemon juice.  Place the prepared fillets, on the baking paper, within the Varoma tray and cover. If you do not yet own a Thermomix®, you can simply steam or bake the salmon separately, as you usually would.

Put the garlic, chilli and spring onions in the Thermomix® and chop them for 4 seconds at Speed 5.

Add 25ml of extra virgin olive oil and 25g of the butter. Sauté for 3 minutes at 120°c, Speed 1.

Add the rice and ‘toast’ it for 3 minutes at 120°c, Speed 1.

Pour in the wine and then reduce it for 1 minute at 100°c, Speed 1. Again, you can do this on a traditional hob.

Pour in the stock, then set the Thermomix® to cook for 20 minutes, 100°c, Speed 1. As you do this, take the ‘measuring cup’ out of the lid and place the Varoma tray with the salmon on it on top of the Thermomix®.

When the risotto is cooked, put the salmon, still covered, to one side, then add most of the parsley, the remaining 10g of butter, the mascarpone cheese, a squeeze of lemon juice and some freshly ground black pepper to the Thermomix®. Stir it in using the spatula or set the Thermomix® to speed 1.5 for 1 minute (no heat). Taste and season to your liking.

Serve the risotto in warmed bowls, with the salmon fillets laid on top, sprinkled with the remaining parsley and a last squeeze of lemon.

We served the dish with a smear of almond, parsley and pecorino pesto- to make that, put all the ingredients in the Thermomix® and give it repeated 3-second blasts at speed 7 until it reaches the consistency you like.

We were inspired to create this Salmon, Spring Onion and Chilli Risotto recipe by the simplicity and many functions of Thermomix®. Our delicious risotto and mouth-watering salmon with flavourful pesto will impress any guests but will not mean you have to slave away in the kitchen for hours.
