Hidden Veg Gooey Chocolate Chip Muffins

In our household, Littlest is quite good but could do better and we really struggle with Biggest. Autism and sensory issues add to the difficulties. It seems like every week he decides a fruit or vegetable that he used to love is now something he cannot eat. I have found myself coming up with new and unusual ways to try to get some veg into him when I can. We have teamed up with Belling to bring you this brilliant recipe for Hidden Veg Chocolate Chip Muffins. These muffins are deliciously gooey and chocolatey but they also contain courgette and carrot. Your little ones will devour them eagerly without a clue that they are packed with veg.

But first, here is our delicious recipe for gooey chocolate muffins with hidden veg.

Hidden Veg Chocolate Chip Muffins

Prep time: 20 minutes

Cooking time: 20-25 minutes

Makes: 12 muffins

Ingredients:

  • 100g plain flour
  • 65g cocoa Powder
  • 1 tsp baking Powder
  • 1/4 tsp salt
  • 1/4 tsp cinnamon
  • 160 g chocolate Chips
  • 2 Eggs
  • 90mls vegetable Oil
  • 100g  light Muscovado sugar
  • 1 tsp vanilla essence
  • 50g raw, peeled and grated carrot (about one medium carrot)
  • 175g raw, peeled and grated courgette (about one large courgette)

Method:

  1. Preheat the oven to 180 degrees or 160 for a fan oven, gas mark 4.
  2. Add muffin cases to a tray with
  3. Sieve the flour, cocoa powder, baking powder, salt and cinnamon into a medium bowl. Add the chocolate chips and combine all until well mixed.
  4. In a separate, larger bowl, whisk together the eggs, oil, sugar and vanilla until completely combined, with no lumps.
  5. Next, add the grated courgette and carrot into the egg mixture.
  6. Gradually add the flour mixture in to the egg mixture until combined. Fold in carefully and try not to over-stir.
  7. Bake for 20-25 minutes. When the muffins are cooked, a skewer or toothpick should come out clean when inserted.
  8. Finally, leave to cool for a few minutes before transferring to a cooling rack to cool completely.

And there you have it. You should find that the carrot and courgette have melted into the gooey muffin, meaning the texture and taste remains the same as other chocolate muffins. Your little ones should love them for a treat with extra hidden veg.
